Salsa Mexicana

From The Mexican Slow Cooker by Deborah Schneider

This salsa complements many dishes and I want to highlight enjoying this salsa with a beef and bean burrito with cheese. This recipe is entitled Burrito "El Guero" on the blog, and it’s from the same fabulous cookbook.

Makes roughly 2 1/2 cups

Ingredients

4 roma tomatoes, finely diced

1/4 white onion, finely diced

1 serrano chile (or jalapino) stemmed, minced

1 tsp salt

8 sprigs fresh cilantro, chopped

Juice of 1/2 lime

Directions

  1. Combine all of the ingredients in a small bowl stir well and serve
